What Is Tonkotsu Ramen?

Tonkotsu (豚骨) literally means 'pork bone.' Tonkotsu ramen is built on pork bones simmered at a rolling boil for many hours — sometimes more than a day — until the collagen and fat emulsify into a rich, creamy, almost milky broth.

What's in a tonkotsu bowl?

  • Creamy pork-bone broth
  • Chashu (braised or torched pork belly)
  • A seasoned soft-boiled egg (ajitama)
  • Aromatics like green onion, black garlic oil and kikurage mushrooms
  • Thin, firm noodles that stand up to the rich soup

Why people love it

Tonkotsu is the comfort-food king of ramen: rich, warming and deeply savory. It's the style most people picture when they think of ramen, which makes it the perfect first bowl.

Try it at Ramen Wakusei
